Cherry Pie

My Favorite Pie contest
Crust:
1-3/4 cups flour
1/4 teaspoon salt
1/2 cup oil
3 tablespoons water
Mix four with salt. Add oil and combine to crum stage.
Add water and mix into dough. Roll half of the dough
between two pieces of was paper, place in pie pan.
Filling:
1-1/4 cups sugar
1/4 cup flour
3/4 cup cherry juice
4 cups cherries
Mix sugar and flour together. Add cherry juice and stir over medium heat until foaming on top. Add
cherries. Stir until mixture thickens.
Gooseberry Pie

Pie Crust:
1-3/4 cups flour
1/4 teaspoon salt
mix together
Add 1/2 cup oil and mix to crumb stage
Add 3 tablespoons water and mix
Roll between wax paper
Pie Filling:
4 cups Gooseberries cooked
Add 1-1/2 cups sugar and 1/4 cup flour to cooked berries
Cook on range top until thick. Add to pastry lined pie pan.
Bake at 450 degrees for 15 minutes. Turn temperature down to
350 degrees and continue baking until browned and done.
