Gooseberry Pie

3rd place winner in the 2013 Logan County Fair My Favorite Pie
contestPie Crust:
1-3/4 cups flour
1/4 teaspoon salt
mix together
Add 1/2 cup oil and mix to crumb stage
Add 3 tablespoons water and mix
Roll between wax paper
Pie Filling:
4 cups Gooseberries cooked
Add 1-1/2 cups sugar and 1/4 cup flour to cooked berries
Cook on range top until thick. Add to pastry lined pie
pan. Bake at 450 degrees for 15 minutes. Turn
temperature down to 350 degrees and continue baking until
browned and done.
