Low-Cal Layered Turkey
Salad

“This is how I use my leftover turkey.”
1 head of lettuce (or 2 bunches of spinach)
1/2 cup leftover turkey cut in chunks
1 1/4 cup frozen peas, thawed
1/2 cup sliced water chestnuts
4 scallions, finely chopped
2 hard boiled eggs, sliced
8 oz. low-fat shredded cheddar cheese
Vinaigrette salad dressing
Wash lettuce or spinach, tear into bite size pieces. Using a
large, clear salad bowl, layer the ingredients in the order
listed. Chill. Serve with dressing on the side.
