Avocado & Tomato Salad

“Use this salad to top a leftover turkey or ham sandwich.”

2 large avocados, cut in chunks
2 large tomatoes, seeded and cut in chunks
1 tablespoon red onion, chopped very fine
1/2 tablespoon pickled jalapeno pepper, finely chopped
Juice of 1 lime (approx. 1 - 2T)
1 teaspoon salt

The avocadoes and tomatoes should be cut approximately the same size. Combine all ingredients and serve immediately.
NOTE: You can prepare the entire dish ahead of time without the avocados and then add them at the last minute. Be sure to seed the tomatoes or there will be too much juice.
