Mom’s Bread Stuffing

2 loaves of white bread, cut into 1 inch pieces
water
insides of the turkey
2 tablespoons butter
1 bunches of celery, chopped
1 onion, chopped
½ teaspoon sage
salt and pepper to taste
chicken broth, if necessary

The night before: cut bread into pieces and place into a huge bowl. Let the bread dry out overnight. The next day, after you remove the insides of turkey, boil them in water in sauce pan until cooked (about 20/30 minutes). Remove insides for later use or discard. Keep water; set aside. Melt butter in large saucepan. Sauté onion and celery until heated through; pour mixture directly over the dried out bread. Sprinkle sage, salt and pepper over mixture. Slowly pour your reserved water over bread, the bread will shrink as you do this. Mix thoroughly. Be careful not to pour too much water in. If you need more liquid, use some chicken broth. Once stuffing is of a consistency that it will stick together and does not look too dry, do not add more liquid. Pour into a greased 9 x 13 pan.(use another pan if it doesn’t all fit in one) Bake in preheated 350 degree oven for 45 minutes to an hour. You want the stuffing to have a nice brown crust on top.
NOTE: Oysters and mushrooms can always be added to this recipe.
