Baked Carrots

“A slightly different casserole to take to family dinners.”
3 cups carrots, diced
12 Saltine crackers, crushed
2 tablespoons onion, minced
½ cup cream
2 cups cheese, grated
In a saucepan, boil carrots in water (only to cover) until
tender; mash with water they were cooked in. Add remaining
ingredients; mix and pour into a greased casserole dish. Bake in
350 degree oven for about an hour.
