Poppy Seed Chicken

“Every time I take this to a dinner, I bring home an empty dish.”

Chicken breasts in the amount equal to a whole chicken
1 (8 oz.) carton sour cream
2 cans cream of chicken soup
poppy seeds to taste
1 stack of Ritz crackers, crumbled
1 stick butter, melted

Season chicken breasts to taste. I use at least salt, pepper, and garlic, but you can add anything you like. Bake until done and dice. In bowl, mix sour cream and soup, stir in poppy seeds to taste. Add chicken and mix well. Pour in a casserole dish. Mix melted butter with Ritz cracker crumbs; add some poppy seeds to taste and sprinkle over the top of casserole mixture. Bake at 350 degrees till bubbly.

Notes: I changed the original recipe a bit, to suit the way I like chicken. The original calls for 1 boiled chicken, but I find that rather bland, and we don't like dark meat. Some of you purists might not like "soup' recipes, but every time I take this to a dinner, I bring home an empty dish. My kids love it.
