Sausage N Peppers Heros

“Nothing like a good, spicy sandwich hot off the grill.”
4 pounds (16 links) sweet or hot Italian sausage links
4 red bell peppers
4 green bell peppers
2 tablespoons olive oil
6 large sweet onions, peeled & thinly sliced
6 cloves garlic, crushed salt and black pepper to taste
16 hero type buns, sliced lengthwise
Grill sausages over hot coals, turning occasionally, until done,
about 10 minutes total. Remove from grill and keep warm. Prepare
red and green peppers by removing stems and seeds; then slice
into 1/4" strips. While sausage is being grilled, in large
skillet, sauté peppers in the olive oil until softened, about 5
minutes. (You can do this on the grill as well) Add the onions
and garlic, season with salt and pepper and continue cooking,
stirring frequently, until vegetables are lightly browned, 10-15
minutes. Toast buns if desired. Place sausage links in hero
buns; generously add sautéed pepper mixture to each sandwich.
Note: Pepper mixture can be made ahead; reheat to serve or serve
at room temperature.
