Carrot - Orange
Salad

“A refreshing salad that adds a
little zip to a festive dinner.”
1 pound shredded carrots
1 (15 oz.) can mandarin oranges,
drained and chopped slightly
¼ cup reduced-fat mayonnaise
½ cup fat-free vanilla yogurt
1 cup mini marshmallows
Rinse carrots if
you buy the already shredded carrot package (remove all excess
water). Mix together all ingredients to coat carrots. Cover and
refrigerate for at least one hour; toss before serving.
