Ethel’s Coffee Cake

3 cups flour
1 tbsp. + 1 tsp. baking powder
1 1/3 cups sugar
1 1/2 teaspoons salt
2 eggs
1 1/2 cups milk
1 cup vegetable oil (Wesson)
Topping:
1 stick margarine
1 1/2 cups brown sugar
1 teaspoon salt
3 tablespoons flour
1 1/2 tablespoons cinnamon
Mix flour, baking powder, sugar,
salt, eggs, milk & oil together. Put in 8x8 inch greased pan. Mix
together topping ingredients; sprinkle the topping on top of the
cake mix. Bake at 400º for 25 - 30 minutes. Serve warm with butter.
