While the recipe is very complicated, it just must be good. With so many rich, sweet ingredients how could it not be? Rather than print out the 26 (yes 26!) ingredients needed, and the 3,000-word instructions, we’re offering you the link to the recipe. We hope that you will marvel over the complexity of this with the understanding that this is a recipe that Karen’s nephew actually makes! Maybe you can try it too. From Nila Smith Nila Smith began her career with Lincoln Daily News as a stringer. Her first ongoing “beat” was covering city council meetings, a position she holds to this day. Starting as a stringer in 2008, she began working in the office in 2009 posting classified ads and doing the arrest and fire reports along with marriages and dissolutions. In 2012 she began doing more with content placement and news posting. In 2022 she took on co-ownership of LDN with business partner Karen Hargis. Nila still reports on city council and covers many of the events in Lincoln and Logan County. Her favorites are the annual Logan County Fair when she spends most of her time in the livestock show arenas and the Balloons Over 66 weekend. Another favorite is the annual Winter Wonderland with decorated Christmas Trees all around the Logan County Courthouse Square. The toughest part was unwrapping the caramels without eating them all. Illini Bars Cookie base: 1/3 Cup Evaporated Milk 1 Boxed Chocolate Cake Mix ¾ Cup Melted Margarine 1 Cup Chopped Pecans or Walnuts (optional though good) Filling: 1 Pkg. 12 to 16 ounces individually wrapped caramels - unwrapped 1/3 Cup Evaporated Milk Extra special ingredient: 1 Pkg 12 ounces Chocolate Chips Instructions: Mix cake mix, milk, margarine, and nuts together and divide in half.
