Saying yes to that occasional photo from Teena opened a door, and we are so happy that both she and we walked through it. A note from Teena about a family favorite holiday recipe This is old school....going way, way back, hence the word OLEO in the ingredients. LOL. I will stick to what my mom wrote. We weren’t the cookie baking family; a simple sugar cookie was all we’d venture to make. But this dessert was a family favorite. My mom, the late Judy Coogan of Mount Pulaski, would make this dessert and take it to all the family dinners when I was a kid. She would make other dishes for the family gatherings held at my Aunt Bernadine’s home in Stanford, Illinois, but this dessert was not only a favorite among her brother, cousins, aunts and uncles, but it was also quick to prepare. As my mom would say, “I can whip it up in no time. It’s never any trouble to make.” Plus, my mom loved anything pistachio, especially when made with added nuts. Me, on the other hand, my favorite pudding was chocolate. So, there were times I would beg her to make this dessert with chocolate pudding and she would oblige me. It seemed like at the family dinners; I was not the only one who loved chocolate either. Mom would always go home with a clean dish no matter what. Pistachio Dessert 1 Stick Oleo (Margarine) 1 Cup Flour ¾ Cup Walnuts Mix the above ingredients and spread into the bottom of a 9x13 pan. Bake at 350 degrees for 15 minutes. This is now the crust. 8 Ounces Philadelphia Cream Cheese 1 Cup Powdered Sugar Mix these together and spread over the top of the cooled baked crust. 2 Small Packages Instant Pistachio Pudding 3 Cups Milk Beat until thick. Spread over the cream cheese layer. Top with an 8 oz. container of Cool Whip and sprinkle with walnuts. Refrigerate overnight. Continued —
