Melt the margarine and marshmallows in the microwave, then stir briefly to mix. Pour the liquid mixture over the popcorn mixture and stir until coated. Press mixture into a greased Bundt cake pan. Cool, turn out of pan, and slice into serving pieces. From Derek Hurley Derek is a stringer with LDN who began with coverage of the Logan County Board being his regular “beat.” Changes in his job status, eventually took him away from board coverage, but Derek remained with LDN, writing occasional articles, and doing a lot of photography. Derek contributes to all the LDN online magazines, and for the Home for the Holiday’s magazine he is indeed the Christmas Curmudgeon, writing tongue in cheek stories that border on being grumpy Grinch-like pieces poking fun at certain aspects of the holiday season. Derek is not a Curmudgeon at all and enjoys spending time with his family year-round and especially during the holiday season. A note from Derek about a family favorite holiday recipe A lot of my family members that baked every year have passed away, so I’m drawing on an old recipe that belonged to my great- grandmother Laura Snyder. It isn’t even one that we would actually eat. Every year at Christmas, my mom and her brothers would help my great-grandmother make dozens of cookies in a variety of flavors, including this recipe. After baking, they would take the cookies to neighbors and various groups in the area. What makes it memorable is that they always remembered to give a tray of these cookies to the residents at what used to be Lincoln Developmental Center. She knew that for the people living there, these would likely be the only cookies they would get at Christmas time. This is just one of the recipes. It’s not a favorite, or even one that I’ve had in a long time. But it’s memorable all the same. Walnut Tea Squares Start with the lower crust ¾ Cup Butter, well creamed 1/3 Cup Sugar 2 Egg yolks 1 ½ Cup Flour 1 Tsp Vanilla Part one instructions: Blend all ingredients listed above and spread into a 9 X 9 pan.
