Yummy Chops
Marilyn Klockenga
“I was trying to put something new together and came up with this recipe.”

4 boneless pork loin chops
1 1/2 to 2 cups apple cider
2 Granny Smith apples
2 medium sized sweet onions

Coat the chops with flour and brown in electric skillet with a small amount of EEVO - sprinkle chops with salt and pepper. When browned on both sides; add apple cider. Peel and cut apples into 8ths, placing 2 slices on each chop and arranging the remaining slices around the chops. Peel and slice the onions into 8ths, placing 1 or 2 slices on each chop and arrange the remaining slices around the chops. Cover and simmer until fork tender. I served with mashed potatoes and candied carrots.

Note: The next time I prepare these, I will add just a smidget of sweet & tangy mustard rub.
