Sweet Potato Bread Loaf

¾ cup butter, softened
1 cup sugar
3 eggs
1 teaspoon vanilla
2 cups mashed sweet potatoes
2 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon allspice
¼ teaspoon ground nutmeg
½ cup buttermilk

Cream butter with sugars; beat in eggs, one at a time, beating well after each addition. Beat in vanilla and sweet potato until blended. In another bowl, combine the flour, baking powder, soda, salt, and spices; stir into the batter, alternating with the buttermilk, until blended. Spoon the batter into greased loaf pan. Bake in preheated 350 degree oven for 60-70 minutes or until top springs back when lightly touched and crack looks dry. Cool. Cut into slices.

Cook’s Note: I like my bread with lots of spices and add a sprinkle of ground cloves and ginger too.
