Chicken Alfredo Flatbread Pizza

“I needed a meal in a half hour, just threw this together, now it's a family favorite.”

Per Person:
1 flatbread
1/4 cup bite size broiled chicken (leftover or bought precooked)
3-4 teaspoons of jarred Alfredo sauce
1 tablespoon each chopped green onion, chopped broccoli, chopped mushroom
handful of mozzarella cheese
1/2 teaspoon parmesan cheese
pepper to taste

Butter both sides of flatbread and spoon Alfredo sauce on top half. Distribute chicken evenly over the sauce; sprinkle with chopped ingredients and top with cheese. I use a toaster oven for individuals and feel it is the best result, but you could put 3-4 on a cookie sheet and bake in the oven. If using a pre-heated 425 degree oven, bake for 10-12 minutes or until cheese slightly brown.

Notes: This meal is great with a salad. Best of all, its 25 min. start to finish. You can experiment with different ingredients, pepperoni and pizza sauce, or taco meat and taco toppings. It's great for “On the Run Nights”.
