Buttermilk Waffles

“Several of my friends have requested this recipe.”

2 eggs
2 cups buttermilk
1/3 cup vegetable oil
splash of vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

In a bowl, beat the eggs; add buttermilk, oil and splash of vanilla. In another large bowl, combine flour, baking powder, baking soda and salt. Stir wet ingredients into dry ingredients just until combined. Pour portion of batter onto a pre-heated waffle iron; bake each until golden brown. Makes about 12 -16 waffles.
