Scrambled Eggs on a Muffin

A perfect get you going breakfast.

1/4 cup chopped green pepper
1/4 cup chopped onion
3 eggs
4 egg whites
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1/4 cup real bacon bits
cup finely shredded cheddar cheese
4 English muffins, split and toasted

Use cooking spray to generously coat a large non-stick skillet; cook green pepper and onion over medium heat until tender. In a large bowl, whisk the eggs, egg whites, water, salt, mustard and pepper. Pour into skillet. Add bacon bits; cook and stir until the eggs are completely set. Spoon onto toasted English muffin bottoms and divide cheese among all 4; replace tops. Serve hot.
