Special Turkey-Tortilla Wrap

1 large (10-inch) flour tortilla
1 tablespoon mayonnaise
1 tablespoon grated Parmesan cheese
12-15 baby spinach leaves
2 oz. sliced thin deli turkey
1 oz. sliced Provolone, Swiss, or Cheddar cheese
2 thin slices of tomato
1 tablespoon chopped red onion (or sliced thin)

Heat the tortilla for about 4 seconds in the mirowave to soften. In a small bowl, stir together mayonnaise and Parmesan cheese; spread over tortilla to within 1/2 inch of the edges. Top with spinach leaves, turkey, sliced cheese, tomato slices, red onion. Roll the tortilla up tightly to enclose the filling, then cut in half crosswise. Refrigerate, eat or wrap both halves in plastic wrap and pack in a lunch.

Substitute with other creamy mixture suggestions: Green Goddess salad dressing, Ranch dressing or make your own dressing with a combo of sour cream, mayo, buttermilk and lots of fresh herbs all whizzed in the blender. Try adding fresh cilantro in the wrap too.
