Strawberry Poppy Seed Dressing

“A dressing recipe I’ve shared with friends and co-workers.”

1/2 medium onion
2/3 cup white vinegar
1 1/2 cups sugar
2 teaspoons salt
1/4 cup strawberries mashed.
1 teaspoon dry mustard
2 cups salad oil
2 teaspoons poppy seeds
Romaine, green leaf, red leaf lettuce
celery to your liking
craisins
strawberries
pecan, walnuts, or honey toasted almonds
Feta cheese to your liking


Chop onion and vinegar in blender, add sugar, salt, dry mustard, mashed fresh strawberries, blend in oil 1/4 cup at a time. (NOTE: I only used 1 3/4 cup oil and used another 1/4 cup mashed strawberries as my last 1/4 cup of liquid instead of the oil) Add poppy seeds to blender last. Chill. Make salad of lettuce, celery, craisins, strawberries, nuts and cheese. Drizzle dressing over the top before serving.
