Baked Zucchini

“I’ve found a different way to use up all my zucchini from the garden.”

3 pounds zucchini, cut into 1-inch pieces
1/3 cup butter
1 medium chopped onion
3-4 garlic cloves, minced
2 eggs, beaten
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 tablespoon dried basil
salt and pepper to taste

In large pan, steam zucchini until tender, about 10 minutes. Place in a large bowl and mash with a fork; drain well in a sieve. (Will need to press down to release excess water.) Place zucchini in a large bowl. In a skillet, sauté onion and garlic in melted butter until light brown. Add onion mixture to the zucchini. Add the beaten eggs, Parmesan, bread crumbs, basil, salt and pepper.. Stir to blend well. Pour the mixture into greased 8-inch square baking pan and bake in oven until firm in the center and brown on top, about 45 minutes. Cut into squares, serve hot with meal.
