Pepperoni Pizza Casserole

1 (16 oz.) package wide egg noodles
2-1/4 cups pizza sauce, divided
½ small green pepper, chopped (optional)
½ small onion, chopped (optional)
1 (3-1/2 oz.) package sliced pepperoni
1 cup sliced fresh mushrooms (or canned)
1 (2-1/4 oz.) can sliced ripe olives, drained
2 cups (8 oz/) shredded part-skim mozzarella cheese

Cook noodles according to package directions; drain. In a large bowl, combine noodles, 3/4 cup pizza sauce, green pepper and onion. Transfer to a greased 13-in. x 9-in. baking dish. Top with remaining pizza sauce. Layer with the pepperoni, mushrooms and olives. Sprinkle with cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through and cheese is melted.

Food Editor’s Note: I wondered when I read this recipe if it had enough pizza sauce in it. Also thought you could substitute spaghetti sauce for the pizza sauce.
