Easter Morning Casserole

“I make this the night before and it is easy to bake on Easter morning before church.”

6 eggs, beaten
2 cups milk
1 cup packaged biscuit mix
2 teaspoon minced dried onion
1 teaspoon fresh parsley
1 teaspoon dry mustard
Salt & Pepper, to taste
½ cup shredded mozzarella cheese
1½ cups shredded sharp cheddar cheese
1 cup fresh Asparagus
8 oz diced ham
8 slices Pepper-jack Cheese
Other additions: mushrooms, crispy bacon, sausage, anything that you like.

In large mixing bowl, stir together everything except the pepper-jack cheese. Spray a 9x13-inch baking dish with nonstick spray; pour mixture in pan. Cover and chill overnight.

To serve, preheat oven to 350 degrees. Bake about 1 hour, or until center is set. At the last 10 minutes of baking, sprinkle the pepper jack cheese on top, and continue to cook until cheese is melted. Serve hot.
