Helen Musa Rankin's Ham Loaf

“A family favorite!”

 

1 1/2 pounds smoked ham, butt end
1 1/2 pounds pork butt (IGA will do that for you)
1 cup cracker crumbs
1 cup milk
2 tablespoons catsup
2 eggs, well beaten
SAUCE:
1 cup brown sugar
1/3 cup vinegar OR small can (2/3 c) crushed pineapple

1/2 cup water
2 teaspoons mustard

 

Mix ingredients well. Form 2 loaves in loaf pans. Note: These can be made into small individual loaves, too. Loaves can be frozen either before or after cooking. Bake uncovered for 1 hour at 350º. When baking, do not baste with sauce until last 10 or 15 minutes, as it will burn. SAUCE: Boil until slightly syrupy.
