Aunt Ann's Pineapple Salad

“This is a family favorite; no holiday is complete without this salad.  Recipe came originally from my Great Aunt Ann” 

 

2 tablespoons unflavored gelatin soaked in 1/2 cup cold water

1 cup boiling water.

1 cup sugar

Grated zest of 1/2 an orange

1/2 cup fresh orange juice.

2 tablespoons fresh lemon juice

16 oz of ginger ale, (preferably Canada Dry)

1 cup + 3 tablespoons crushed pineapple

1 (8oz.) package cream cheese softened

3-4 tablespoons powdered sugar.  

 Add cold water and gelatin mixture to the boiling water. Stir in the sugar to dissolve. Then add orange and lemon juice then grated zest. Stir well; add 1 cup pineapple and ginger ale. Place in pretty serving bowl. Chill over night or at least 8 hours. Top with the following mixture. Blend cream cheese with 3 tablespoons pineapple and a little powdered sugar to desired sweetness.
