Special Baked Salmon with Glaze
SUBMITTED by Jane, Springfield
“I have family members that don’t care for ham at holiday gatherings, I decided to try something different last year.”

1 tablespoon brown sugar
2 teaspoons butter
2 teaspoon honey
1 tablespoon Olive Oil
1 tablespoon Dijon mustard
1 tablespoon soy sauce
salt and pepper to taste
1 salmon fillet (2-1/2 pounds)

In a small saucepan over medium heat, cook and stir the brown sugar, butter and honey until bubbly. Remove from the heat; stir in the oil, mustard and soy sauce. Cool for 5 minutes. Place salmon in a greased baking pan; season with salt and pepper. Brush with brown sugar mixture. Bake in pre-heated 350 degree oven, uncovered for 20-25 minutes or until fish flakes easily with a fork.
Note: I like to bake my salmon on a large foil-lined baking dish for easy clean up.
