Tortellini and Sausage Soup

sweet Italian sausage, casings removed
1 small onion,
diced
48 oz. carton
Swanson’s chicken broth
1 (14.5 ounce) can
stewed tomatoes, cut up
1/2 cup diced
carrots
1 medium zucchini,
diced
1/4 cup grated
Parmesan cheese
1 teaspoon dried
basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 (9 ounce) package
refrigerated cheese tortellini
In a large pot over
medium high heat, saute the sausage and onion for 5 minutes, or
until browned and crumbly. Add broth, tomatoes, carrots, zucchini,
Parmesan cheese, basil, salt and pepper. Bring just to a boil,
reduce heat to low and simmer for 15 minutes. Stir in tortellini.
Simmer 10 more minutes.
