Home-Made Potato Salad

“There are times you just get hungry for the real stuff, here’s a good recipe.”

 

1 (5 lb.) bag red skin potatoes
4 eggs, hard boiled, cooled & chopped
4 stalks celery, chopped
1 small onion, chopped fine
1/2 small jar mayonnaise

1/2 small jar salad dressing
1 tsp. - 1 T sugar
1 tablespoon yellow mustard
2 tablespoons sweet pickle relish
salt and pepper to taste

Bring a large pot of water to a boil. Add potatoes & cook until tender, but still firm. Drain & cool. Carefully cube potatoes (with skins or without skins). Add all other ingredients in a very large bowl; only stir once after all ingredients are added. Be careful not to mash potatoes. Add more mayo/salad dressing depending your taste & if it seems dry. Chill immediately & keep chilled until ready to serve.
