Blackberry Muffins

¼ cup sugar

1 tablespoon flour

½ teaspoon cinnamon

¼ teaspoon nutmeg

3 teaspoon cold margarine

2/3 cup blackberry jam

½ cup orange juice

1 egg, slightly beaten

2 cups Bisquick baking mix

2/3 cups chopped pecans, optional

 

In a small-size mixing bowl; combine sugar, flour, cinnamon and nutmeg. Cut in margarine until crumbs form to make crumb topping; set aside. In a medium-size mixing bowl, combine jam, orange juice and egg.  Add baking mix and nuts (if desired) stir only until moistened (batter will be slightly lumpy). Fill muffin tins 2/3 full. Sprinkle with crumb topping. Bake in preheated 400º oven for 15-20 minutes or until golden brown.
