Hawaiian Loaf

1/2 cup butter, softened

1 cup white sugar

2 eggs

1 cup mashed ripe bananas

1 teaspoon vanilla extract

1 teaspoon almond extract

1 cup flaked coconut

1 (8 oz.) can crushed pineapple

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

 

In a mixing bowl, cream butter and sugar. Add the eggs, banana, milk, extracts, coconut and pineapple.  Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Transfer to a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
