Oven-Fried Chicken Strips

¾ cup vegetable oil
1 cup buttermilk
1 egg, beaten
1 cup flour
1- 2 teaspoons Cajun seasoning
½ teaspoon paprika
½ teaspoon garlic powder
1 ½ pounds chicken tenders, rinsed and dried
salt and pepper to taste

Place rimmed baking sheet on rack in cold oven; add oil to pan. Heat oven to 425 degrees.

Meanwhile, in medium bowl combine buttermilk and egg and whisk until well blended. In shallow baking dish or pie plate, combine flour, Cajun seasoning, paprika and garlic powder. Coat each chicken piece in flour mixture. Dip in buttermilk mixture. Coat again in flour mixture. Place on plate in single layer until oven is heated to 425 degrees.

Place coated chicken tender in heated oil. Bake 6 minutes. Turn. Bake 6-7 minutes more or until golden. Place baked tenders on serving platter. Season with salt and pepper.

Editor’s Note: the chicken strips fry better when oil is completely hot.
