Herb Fried
Tomatoes2 T dried
Basil
2 T dried Thyme
1/2 tsp salt
3/4 tsp pepper
5 T Olive Oil
2 Roma tomatoes
2 T Olive Oil
Mix herbs, salt, pepper,
and the 5 tablespoons of oil oil to form a paste.
Cut tomatoes in half
lengthwise. Spread cut sides with herb paste.
Add 2 tablespoons of olive
oil to a small skillet over medium heat.
Place tomatoes in skillet
herb side down, cover and simmer 5 minutes
Serve with herb side up.
