Baked Dijon Salmon

“A January favorite when watching my diet.”

1 cup fat free sour cream
2 teaspoons dried dill
3 tablespoons scallions, finely chopped
2 tablespoons Dijon mustard
2 tablespoons lemon juice
1 1/2 lb. salmon fillet with skin, cut in center
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

In small bowl, whisk sour cream, dill, onion, mustard, and lemon juice to blend. Preheat oven to 400 degrees. Lightly coat baking sheet with cooking spray; place salmon, skin side down. Sprinkle with garlic powder and pepper; spread sauce on top. Bake salmon until just opaque in center, about 20 minutes. Eat hot with steamed vegetables for a healthy meal.
