Cauliflower Casserole

1 medium head cauliflower, broken into florets
1 cup sour cream
1 cup (4 oz) shredded cheddar cheese
1/2 cup crushed corn flakes
1/4 cup green peppers
1/4 cup red pepper
1 teaspoon salt
1/4 cup grated Parmesan cheese
Paprika to taste
Steam cauliflower for 5 minutes until crisp-tender; drain. In a
bowl, careful combine cauliflower, sour cream, cheddar cheese,
corn flakes, green peppers, red peppers and salt. Pour into a 2
quart greased baking dish. Sprinkle with parmesan and paprika.
Bake uncovered at 325 degrees for 30-35 min.
NOTE: you can skip the corn flakes if you wish, it’s about 13
carbs. I use low-fat ingredients otherwise.
