Healthy Minestrone Soup

“Warm up your family the healthy way.”

1/4 cup olive oil
1 clove garlic, minced
1 1/3 cup onion, coarsely chopped
1 1/2 cup celery, coarsely chopped
1 tablespoon fresh parsley, chopped
1 cup carrots, chopped
4 cups cabbage, chopped
1 (6 oz.) can tomato paste
1 (16 oz.) can tomatoes, cut up
1 1/2 cups frozen peas
1 can red kidney beans, drained, rinsed
1 can green beans (can use fresh)
11 cups water
2 cups spaghetti (uncooked, broken) or shell macaroni

Heat oil in large saucepan, add garlic, onion, and celery; sauté for about 5 minutes. Add all other ingredients except spaghetti. Stir and bring to boil. Reduce heat, cover and simmer for about 1 hour or until vegetables are tender. Add uncooked spaghetti or macaroni and simmer for only 2–3 minutes or until tender.

Note: I like to use a large can of V8 juice and leave out the tomato paste.
